Mmmm… Cheese.

“Mmmm…Cheese.” My dad says that a lot. Growing up we were big cheese fans. The more cheese the happier we were. This dish makes me happy about cheese. It is pretty much a fancy-homemade hamburger helper, but I like it.

The recipe came from a cookbook I received for Christmas from my hubby, called “100 Best Favorite Brand Name Recipes”. This one is Velveeta Cheesy Beef Stroganoff. I changed it a tiny bit, but not much. Here is the recipe I used.

Velveeta Cheesy Beef Stroganoff

1 lb. ground beef
2 cups water
2 1/2 cups pasta, uncooked
8 oz. Velveeta
1 can (10 1/2 oz.) condensed cream of mushroom soup
1/4 tsp pepper
1/4 tsp red pepper flakes
1 handful of shredded mozzarella

1. brown meat in LARGE skillet, drain.
2. stir in water. bring to boil. stir in noodles. reduce heat to medium-low; cover. simmer 8 minutes, or until noodles are tender.
3. add Velveeta, soup, pepper, red pepper flakes, mozzarella. stir until all the cheese is melted.

Served with our fancy hamburger helper we made a giant loaf of frozen bread, sprinkled with Parmesan cheese.
