Cheese and Chocolate

Mmmm… Cheese.

Tuesday nights are fairly free for us, which means I have a little more time to make a wonderful meal for my hubby. This week we made lasagna & rolls.


This little sucker is loaded with cheese: Ricotta, Mozzarella, Provolone, & Parmesan. I. Love. Cheese.

Cheesy Lasagna

1 lb. ground beef
1 garlic clove, minced
1 can (6 oz) tomato paste
1 can  (8 oz) tomato sauce
1 Tbsp dried basil
1 Tbsp dried parsley
1/2 tsp salt
1 1/2 cup ricotta cheese
1 egg, beaten
1/4 cup parmesan
1/2 lb. sliced mozzarella
2-3 slices provolone
6-8 lasagna noodles

*this makes a smaller lasagna, definitely will not fill a 9 x 13 pan

After the meat is cooked add the tomato paste & sauce, let simmer for 15-20 min.
Mix ricotta cheese and egg.
Layer in baking dish: noodles, ricotta mixture, mozzarella, provolone, meat and repeat. Top last layer of meat with a little more mozzarella and parmesan.
Bake at 350 degrees for 20-30 minutes.


After our wonderful dinner we invited a couple friends over and made Chocolate Pudding Cookies with Mini Robin Eggs!

After the cookies were done we played a long game of Settlers of Catan. I lost. So did my hubby. But we got cookies, so it was kind of okay.
