Peach Pie Bliss

Peaches were on sale this week at the grocery store. They really weren’t very ripe, but I couldn’t pass them up. Since they didn’t seem fit to enjoy solo, I threw them into a pie crust. Lovely.

I don’t own a pie pan. I didn’t really want a big pie anyways. I wanted to make mini pies, in my large muffin tin pan. They are simply adorable. And a cinch to make.

Roll out the dough to make circles–  I used the large cup/bowl thing on the right. Press your dough into a sprayed muffin pan.

Peel the peaches. Chop the peaches. Sugar the peaches. Honey the peaches. Cinnamon the peaches. Fill the pie crust. Pretty-ify the tops of the mini pies. Bake.

Take out the mini pies. Smile at them. Coo at them if you want.

Serve them up. Smile as you indulge.

The Recipe:

1/2 box of pie crust (according to box directions)
1/2 tsp almond extract
3 peaches, peeled & chopped
1/3 cup sugar
1 tbsp honey
1 1/2 tsp cinnamon

– mix pie crust according to package directions + almond extract.
– grease muffin tin, place crust circles into  muffin holes.
-drizzle pie crust with honey
-mix peaches, sugar, cinnamon, and tbsp honey. let sit 5 minutes
-fill pie crusts with peaches
-adorn top of pies to your liking.
-bake at 450 degrees until golden brown (about 15 minutes)

Enjoy a mini pie, just for you.
