Italian Shredded Beef

Every week I ask Timothy for a meal or two or three for the menu. Usually I don’t get much of a response. Occasionally though, he gives me a little feed back. Last week his request was Italian Shredded Beef that his mom used to make. Well, I was too lazy to call my mother-in-law for the recipe. So instead I scrounged the internet for recipes of Italian Shredded Beef. Eventually I compiled three different recipes to make a lovely little roast all our own.


Italian Shredded Beef Sandwiches

5 lb. roast
3 cups water
1 tsp pepper
1 tsp dried oregano
1 tsp dried basil
1 tsp onion salt
1 tsp dried parsley
1 tsp garlic powder
1 bay leaf
1/2 onion, chopped
1 tsp italian seasoning

-trim fat off of roast.
-bring water with seasoning to a boil on the stove.
-pour seasoned water over roast in crockpot, make sure to scrap out seasoning that gets left behind.
-cover the roast on high for 4-5 hours.
-remove the bay leaf, shred.
-put back into crockpot on low with juices until ready to serve.

We served our beef on broiled rolls with provolone cheese, accompanied by homemade mashed potatoes & gravy. Not sure I could tell you how to make the gravy from scratch, but ours turned out very well.

This meal will be a great one to whip up in no time once this summer ends. I cannot wait for summer to end.

Not that this little fishing man is ready for summer to end…
